The cooking surface is 304 stainless steel, also called 18/10 stainless; three aluminum layers form the heat-spreading core; and a ferritic 400-series stainless exterior adds magnetic properties for induction cooking. The clad layers extend up the sides as well as across the bottom.
Yes. Heritage Steel lists the pan for all common stovetops, including induction. Its product specifications also rate it oven-safe to 800°F and broiler-safe, so the pan can move from stovetop to high-heat oven or broiler within those stated limits.
Wash the pan thoroughly with warm, soapy water before cooking in it. Heritage Steel says no special product is required and that you may use the sponge or scrubber you prefer because the pan has no coating to protect. Drying with a soft cloth or towel is optional and mainly helps prevent water spots.
Avoid leaving salt and cold water together on the steel without stirring. When bringing water to a boil, Heritage Steel recommends adding salt only after the water is simmering and mixing it in thoroughly. Following that practice helps avoid the salt-pitting damage described in the manufacturer's care guidance.
